Staff Raves-n-faves — David’s Crockpot Chicken Pot Pie May 12th, 2018

David Kelly, our amazing Bulk Department Lead, has been working at the Co-op for 8 years. He’s a friend to all and a super-pro when it comes to bringing healthy food to our customers. Being such a busy guy, he likes to take a no-fuss approach to dinner.

This recipe is one of his favorites because he can find all the ingredients right here at the Co-op and let his slow cooker do all the work!

David’s Crockpot Chicken Pot Pie

Ingredients

1 1/2 pounds of chicken breast
1 white onion
2 cups low sodium chicken broth
2 containers of condensed chicken soup
1/2 cup sliced carrots
1/2 cup frozen peas
1 tube of biscuits

Directions

Chop onion into large pieces and line the bottom of the crockpot with them.

Add the chicken breast, condensed soup, and broth. Set crockpot on high for 3 hours.

After 3 hours, shred the chicken and add carrots and frozen peas.

Preheat your oven to 350 degrees.

Open the tube of biscuits and place them in a single layer on top of the mixture.

Lift the crock out of the slow cooker and bake until the biscuits are brown – about 12-15 minutes.
